Showcasing Sustainable Culinary Innovation

For a second consecutive year, seven talented Sodexo Chefs have taken part in the group's global Sustainable Chef Challenge before a panel of experts included German three-Michelin star Chef, Thomas Bühner.

The competition in the town of Landsberg am Lech, southwest Bavaria on 15th November was supported by Rational AG, Eaternity and the World Wildlife Fund (WWF).

Each Chef was tasked with producing two sustainable dishes that met four key criteria:

Two of the participants were selected for a Culinary Experience Grand Prize in acknowledgment of their 'tasty and sustainable' creations: Sharon McConnell from Northern Ireland for “Pistachio Crusted Celeriac Steak” and “Vegan Chocolate Mousse with Dates and Nuts”; and Ricardo Machado from Brazil for his “Sautéed banana peel medallion with sweet potatoes” and “Banana and Coconut Mash”.
